Healthy Quinoa Lunch Bowl

Back in January, I posted my Healthy Quinoa Breakfast Bowl recipe. Now it’s time to talk about lunch!

This colourful quinoa lunch bowl is nutrient-rich, packed with protein, and easy to prepare. The best part is that you can customize it with any ingredients you like. I recommend adding a base of greens, a protein, a fruit, and a topping that adds a bit of salty flavour to complement the sweetness of the fruit.

Recipe

Ingredients:
1/4 cup uncooked quinoa, rinsed
3/4 cup chicken broth (can also use vegetable broth or water)
2 cups romaine lettuce, chopped
2 hard boiled eggs, peeled and chopped
4 small strawberries, diced
2 tbsp feta cheese, crumbled
lemon juice to taste

Directions:
1. In a small pot, bring chicken broth to a boil and stir in quinoa. Reduce heat to low, cover and let simmer until quinoa is tender (15-20 minutes). Remove from heat and leave quinoa covered for 5 minutes to absorb any remaining liquid. You can either let the quinoa cool before using, store it in the fridge and use it later, or use it while it’s hot.
2. When you’re ready to assemble the salad, add the greens to a bowl and top with quinoa, eggs, strawberries, and feta. Stir gently to combine. Spritz with lemon juice for extra flavour.  If you cooked the quinoa in water, season the salad with a bit of salt and pepper.
