Although summer hasn’t officially started, the weather this May has been hotter than usual. In the past, I've been guilty of visiting ice cream parlours way too many times during spring and summer months, so this year I decided to create my own cold treat that’s delicious yet healthy.

The best part is that this recipe is so easy to create and does not require an ice cream maker. It also involves simple ingredients like frozen fruit, Greek yogurt, and some flavourful spices and toppings.

The only tool you will need is a food processor or a blender. I use my NutriBullet.

Within about 30 seconds, you will have a decadent bowl of frozen yogurt that’s guilt-free and packed with nutrients and antioxidants. The hardest part of this recipe is waiting for the frozen fruit to thaw a bit before blending.

Recipe

Ingredients:
1 frozen banana cut into small pieces
1/2 cup frozen cherries
1/2 cup plain Greek yogurt
2 tsp cocoa powder
1/2 tsp cinnamon (optional)
1/2 tsp vanilla extract (optional)
2 tsp cacao nibs or chocolate chips (optional)

Directions:
1. Allow frozen fruit to thaw for about 15 minutes before beginning this recipe.
2. Place fruit, yogurt, cocoa powder, cinnamon, and vanilla in a blender or food processor and pulse until creamy.    
3. For more of a hard ice cream texture, transfer mixture to a container and place in the freezer for one hour before serving. For a frozen yogurt consistency, transfer mixture to a bowl after blending, top with cacao nibs or chocolate chips, and serve.
