Bagel with Smoked Salmon, Avocado, and Capers

Have I mentioned yet that one of my favourite foods is smoked salmon? I love it on salads, in wraps, on crackers, and on sandwiches.

My favourite breakfast to order at a restaurant is a bagel with smoked salmon, cream cheese, and capers. I know it’s not the healthiest breakfast, but it’s nice to have as a treat once in a while.

I decided to lighten up this delicious combination by replacing the cream cheese with avocado. It’s just as flavourful and adds some healthy fat.

This recipe is also very easy to make.

First, mash the avocado and mix with seasonings.

Next, spread the avocado mixture on a bagel and add some capers. I like to put the capers on before the smoked salmon so that they don’t fall off while I’m eating. Restaurants often do the opposite which can be inconvenient and cause the capers to roll onto the plate, the table, or in my case, the floor.

Recipe

Ingredients:
1 bagel of your choice (I used an everything bagel)
1 avocado
1-2 tsp lemon juice
1/2 tbsp capers
2 slices smoked salmon
salt and pepper to taste

Directions:
1. Slice bagel in half and toast if desired.
2. In a small bowl, mash avocado with a fork. Mix in lemon juice and salt and pepper. Adjust to taste. Spread avocado on each bagel half.
3. Top each bagel half with capers.
4. Place one piece of smoked salmon on each bagel half.
5. Top with a pinch of pepper (optional).
